Fresh Spring Salads

It is time to give Mom a break from the hot kitchen. Let’s welcome fresh spring salads with convenient ingredients that form the basis of a balanced meal that can be ready in 15 minutes flat, available from the Spar recipes website: https://www.spar.co.za/Recipes

Pizza Pasta Salad

HINTS & TIPS
SPAR Freshline pita breads may be substituted for the pizza rounds, if first spread with SPAR tomato paste or pesto before warming in the oven.

WHAT YOU NEED
• Pack of 4 frozen, tomato pizza bases.
• 4 SPAR eggs.
• 1 pack SPAR Freshline Sweet Baby                     Greens Mix.
• +-100 g biltong shavings.
• 4 SPAR Freshline spring onions, or a                  few slices of red onion, in rings.
• 200 g SPAR cheddar cheese, grated
  (500 ml).
• 2 fresh hard-cling peaches, rinsed,
   sliced off the pip, then thinly slivered.
• 1 ripe avocado pear, halved, stoned,then         peeled and slivered or cubed.
• SPAR Chip and Salad Sauce.

 

HOW TO DO IT
1. Pre-heat the oven and bake pizza bases according to the on-pack instructions.
2. While they are baking, hard-boil, peel
and quarter the eggs, then prepare all the topping ingredients. Have them ready on the kitchen counter with 4 dinner plates.
3. Place a freshly baked hot pizza base on each dinner plate, and cut each pizza into quarters.
4. Scatter salad leaves, and all the loose
ingredients on top, one at a time.
5. Finish off with a generous drizzle of sauce and serve immediately.

Ocean Pasta Salad

HINTS & TIPS
A can of SPAR Wild Caught Pink Salmon may be drained and added in as chunks, to extend the meal further.

WHAT YOU NEED
• 500 g pkt SPAR Italian style shell
noodles.
•  SPAR sunflower oil.
•  1 box frozen SPAR Mixed Seafood.
(400 g net mass).
•  600g pkt SPAR Freshline Pineapple
Stir-Fry.
•  1 large red chilli, finely slivered
(excluding the pips).
•  Salt and freshly ground black pepper
to taste.
•  1 tub SPAR Salmon Flavoured low fat
cream cheese (175 g).
•  50 ml SPAR Sweet Chilli sauce.

 

HOW TO DO IT
1. Boil the noodles in rapidly boiling
lightly salted water.
2. Meanwhile, heat a little sunflower oil
in two frying pans. In one, stir-fry the
Pineapple Stir-Fry mix and chilli on
high heat, until just losing its
crispness. At the same time, in the
other pan, cook the thawed or frozen
mixed seafood for 3 minutes. Remove
with a slotted spoon and add into
the cooked vegetable mix, to heat
through. Season well with salt and
pepper.
3. Drain the cooked noodles in a
colander.
4. Combine the cream cheese and
chilli sauce in the empty pot from the
noodles, and stir to thin it down somewhat.
Add in the hot drained noodles,
tossing until they are coated in sauce.
5. Serve immediately in bowls with the
seafood vegetable mix on top.

No Cook Salad

HINTS & TIPS
Substitute the apples with a can of apricots, diced, or a can SPAR Pineapple Pieces. Freeze the drained syrup in ice lolly moulds for enjoying on another day. Or top it with soda water and ice cubes for a refreshing drink.

WHAT YOU NEED
• 1 can SPAR Chickpeas or Lentils, well
drained.
•  2 large fresh apples, unpeeled and
diced (1 red and 1 green).
•  1 small onion, grated or very finely
chopped.
•  1 medium tomato, diced.
•  1 large stick celery, sliced.
•  Salt and pepper to taste.
•  75 ml SPAR Apricot & Sweet Chilli
Sauce, SPAR Tomato Sauce or SPAR
Pineapple Chutney.
•  125 ml SPAR Smooth Mayonnaise.
•  1-2 cans SPAR Light Meat Tuna Chunks
in water or oil, well drained.
•  Salt and pepper to taste.
•  1 packet SPAR Freshline Croutons (80 g).

 

HOW TO DO IT
1. Gently combine the ingredients
(except croutons) and spoon the
mixture onto a salad platter or bowl.
2. Serve soon and sprinkle over the
croutons at the last minute.

Jewel Salad

HINTS & TIPS
As a vegetarian meal, serve an additional side-vegetable to enhance the nutritional balance further. To turn this into a meaty salad, toss in a small amount of crisply fried, chopped SPAR lean bacon.

WHAT YOU NEED
• 1 head SPAR Freshline broccoli,
rinsed.
• 1 can SPAR chickpeas, drained.105 g SPAR Cranberries (125 ml).
•  1 round SPAR Feta Cheese with black
pepper.
•  10 ml SPAR honey.
•  1 large clove garlic, crushed.
•  150 ml SPAR fat free plain yoghurt.
•  +- 25 ml Parmesan cheese shavings.

 

HOW TO DO IT
1. Trim off all the firm stalks and use just
the top green florets. Separate them
further into the smallest sections
posssible. Pour boiling water over
them and set aside for 3 minutes. Tip
into a sieve for the water to drain off,
then briefly refresh under running cold
water.
2. Combine the blanched broccoli in a
bowl with the chickpeas and
cranberries.
3. In a small bowl, mash the feta, honey
and garlic together into the yoghurt.
Gently turn it into the salad ingredients
until they are gently combined.
4. Top with Parmesan shavings, cover
and refrigerate until required.

School Lunch Box Salad

WHAT YOU NEED

PER CHILD PORTION
• Tiny bunch seedless grapes, halved or
left whole (approx 20 grapes).
• 4 SPAR Chicken Cheese cocktail
viennas, halved or left whole.
• 1 Celery stick cut into 2 cm lengths.
• Handful SPAR natural whole nuts.
• Few shredded parsley or mint leaves.
• 15 ml SPAR Greek-Style Tsatsiki Dip.
• Matchbox -size piece SPAR Gouda
cheese, cubed.
• Drizzle SPAR honey.

 

HOW TO DO IT
1. Combine all the ingredients and
divide into containers with a lid that
seals well.

HINTS & TIPS
Pack with a frozen ice-brick in a small
SPAR cooler-bag. Recommended accompaniment: Remember to pack a drink of iced water or diluted fruit juice alongside, for healthy refreshment.
