Mother’s Day Breakfast Tower
Make your mom feel really special with this luxurious breakfast in bed, crammed with smoked salmon and creamy cheese sauce. It’s so easy that kids can assemble it themselves.
WHAT YOU NEED
Pack of Scotch Pancakes.
1 Jumbo or X-large egg.
2 smoked salmon slices.
A thick slice from a fresh tomato.
Basil pesto.
A pouch ready-to-heat cheese sauce.
Edible flowers or herbs for garnish.
HOW TO DO IT
1. Set the breakfast tray.
2. Pan-grill a tomato slice, then spread one side sparingly with pesto.
3. Poach an egg (only 1 minute in the microwave!)
4. Place a Scotch Pancake on a serving plate and top it with the hot poached egg. Cover with a Scotch Pancake.
5. Top this with smoked salmon slices. Cover with a Scotch Pancake.
6. Place the grilled tomato slice on this, and cover with the fourth Pancake.
7. Warm the sauce in the microwave oven according to the on-pack instructions.Pour some around the base of the tower and serve immediately.

Quick Breakfast Muffin Quiche
A deliciously simple, breakfast treat.
WHAT YOU NEED
12 Slices white bread, crusts
removed.
Butter, for spreading.
6 slices chargrilled ham, chopped.
200g ricotta cheese, crumbled.
100g cheddar cheese, grated.
6 eggs, lightly whisked.
10ml mixed herbs.
10ml barbecue spice.
125ml milk.
HOW TO DO IT
1. Spread one side of the bread slices with butter and press into 12 x ½ cupcapacity (125ml) lightly greased muffin
tins. Bake at 200°C for 5–6 minutes or until just golden.
2. Fill each bread case with the ham, ricotta and cheddar cheese. Place the egg, herbs, barbecue spice and milk in a jug and mix well to combine.
3. Pour the mixture into the bread cases and bake for 10–15 minutes or until cooked through and golden.
HINTS & TIPS
You can freeze these quiches for up to 2 months. Place in the fridge to defrost and
warm in a low oven.
Papaya Breakfast Bowls
Save on the washing up with these papaya breakfast bowls, full of yoghurt, granola and fresh berries.
WHAT YOU NEED
1 ripe papaya (pawpaw)
2 cups yoghurt
1/2 cup granola
3 teaspoon chia seeds
Berries
Honey to drizzle
HOW TO DO IT
1. Slice the papaya in half lengthwise and remove the seeds with a spoon.
2. Fill the centre of each papaya half with 1 cup yoghurt, 1/4 cup granola
and 1 teaspoon chia seeds.
3. Top with fresh berries and drizzle with honey.
Breakfast Eggy- Bread
What could be better than this yummy eggy-bread breakfast, topped with luscious plums and peaches?
WHAT YOU NEED
4 Plums.
2 Peaches or nectarines.
20g PCastor sugar.
4 White bread slices.
1 large egg.
150ml milk.
1tsp vanilla extract.
20g butter.
Icing sugar, for sprinkling.
HOW TO DO IT
1. Halve, pit and slice the plums and peaches or nectarines. Put them into a saucepan with the castor sugar and 100ml water. Simmer for 8-10 minutes, until just tender.
2. In a large shallow dish, beat together the egg, milk and vanilla extract. Add the pieces of bread and leave them for about 5 minutes, turning them over so that each side gets a good soaking.
3. Heat the butter in a large non-stick frying pan. Add the soaked bread and cook it gently for about 1-2 minutes per side, until golden brown.
4. Share between 4 warm serving plates and spoon the fruit on top. Serve, sprinkled with a little icing sugar.
Horlicks and Honey Mini Muffins
Horlicks and honey is a great flavour combination. Serve as breakfast, with morning tea or in a school lunch box.
WHAT YOU NEED
240 g cake flour (500 ml).
125 ml Horlicks powder.
20 ml baking powder.
Pinch salt.
60 ml white sugar.
2 large eggs.
250 ml milk.
60 ml sunflower oil.
5 ml vanilla essence.
60 ml runny honey.
HOW TO DO IT
1. Preheat oven to 190 ºC with oven shelf in centre position. Lightly coat 2 x 12- cup silicone mini muffin pans with nonstick cooking spray.
2. Combine flour, Horlicks, baking powder, salt and sugar in a mixing bowl.
3. Warm the milk, oil, essence and honey together in a suitable jug in the micro wave oven for 1 minute on 100% power or in a small saucepan on the stove.
4. Add in the beaten egg, and pour this mixture onto the dry ingredients, mixing gently with a wooden spoon until smooth.
5. Pour mixture into prepared mini-muffin pans and bake for 12 minutes.
Egg in a Nest
If you like Scotch Eggs, you’ll love this easy version that’s perfect for a delightfully easy breakfast, picnic or kids meal!
HINTS & TIPS
Serve with crunchy salad of fresh celery sticks and apple slices if used for a luncheon. For breakfast, grilled bacon and buttered toast.
WHAT YOU NEED
1 beef sausage per person
1 large SPAR egg per person
5 ml SPAR sweet chilli sauce
30 ml SPAR grated cheddar cheese
per person
HOW TO DO IT
(Tested in a 900 Watt microwave oven)
1. Squeeze the meat from a sausage casing, directly into a 9cm diameter
ungreased ramekin dish.
2. Press the sausage meat evenly on the base and up the sides of the dish.
3. Break an egg into each one and prick the yolk.
4. Add a spoon of sauce then and finish with a generous layer of grated
cheese.
5. Cover each dish with cling-film, and microwave as follows:
For 1 cook for 3- 4 minutes. For 2 together cook for 5 – 6 minutes.
To cook for a family, cook in batches of 2 together each time for best results.
