Spicy Chicken Drumsticks

You need:

  • 12 chicken drumsticks
  • 1 packet Chicken Marinade
  • 3cm piece fresh ginger, grated
  • 1 garlic clove, crushed
  • 10 ml Chinese five spice
  • 5 ml crushed chilli
  • 30 ml soy sauce

How to do it:

Cut the chicken drumsticks three to four times each with a sharp knife. Prepare Chicken Marinade according to packet instructions. Add the ginger, garlic, Chinese 5 spice, crushed chilli and soy sauce. Pour over the chicken drumsticks and leave to marinate for 20 minutes. Braai over medium coals for about 15 minutes, basting frequently.

NB: Make sure that you cook the
chicken all the way through.

Lemon & Garlic Lamb Kebabs

You need:

  • 1 head of garlic
  • 1 packet Garlic Steak Marinade
  • Juice and zest of 1 lemon
  • 500 g lamb, cubed
  • 8 wooden skewers, soaked in water for 20 minutes
  • 1 Tbsp chopped fresh mint

How to do it:

Wrap head of garlic in foil and bake in oven at 200ºC for 30 mins. Remove from oven, unwrap and cool. Prepare the marinade according to pack instructions and add lemon juice and zest. Squeeze the soft garlic cloves into marinade mixture. Marinate the lamb cubes for 20 mins then thread onto wooden skewers. Grill or braai kebabs for 10-15 mins, basting regularly.

NB: Beef cubes or chicken can be
used instead of lamb.

Spicy Braaied Linefish

You need:

  • 2 kg fresh, whole Linefish
  • 1 lemon, sliced
  • Salt and pepper
  • 1 packet Cape Malay Curry
  • Cook-in-Sauce
  • Bunch of fresh Coriander

How to do it:

Make 3 cuts on each side of the fish. Season and stuff the fish with lemon slices. Brush the fish liberally, inside and out with the Cook-in-Sauce. Place in a fish grid or on a normal braai grill and braai over medium
coals, basting and turning frequently. Braai for approximately 10 minutes per side. Garnish with fresh coriander leaves and serve with extra lemon wedges.

Braai Top Potato Bake

You need:

  • 1 kg baby potatoes
  • 75 ml Olive oil
  • 15 ml Paprika
  • 5 ml Potato/Vege Spice
  • 250 g streaky bacon
  • 200 ml mayonnaise
  • Salt and Pepper

How to do it:

Parboil potatoes for 10 minutes. Line braai grill with foil and let it warm up. Mix the paprika and herb blend with the olive oil. Toss the potatoes in the spice and oil mix. Spread over the foil-covered braai grill. Brush bacon with olive oil and place alongside the potatoes. Braai for 10-15 minutes, turning regularly. Once bacon is crispy and potatoes are browned, remove from braai. Chop the bacon and place with potatoes in a bowl. Add the mayonnaise, and toss to combine. Serve immediately.
